


Pumpkin Pie Banana Bread
This is one of my favorite things to bake when I'm looking for a comfort dessert at the end of the day or a sweet breakfast in the morning served with a cup of coffee.

Method
For the Bread
- Preheat oven to 350°F and line a 9"x5" loaf pan with butter and parchment paper.
- In a medium mixing bowl, mash the ripe bananas. Add in the melted butter, room temperature eggs, pumpkin puree, vanilla extract, and the pumpkin pie spice extract. Mix until well combined.
- In a separate bowl, whisk together the granulated sugar, all purpose flour, cake flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Combine the wet ingredients with the dry ingredients and mix until just combined (don't over-mix!)
- Pour all of the batter into the loaf pan.
For the Crumble
- In a small bowl, mix together the brown sugar, flour, and melted butter. Sprinkle all of the crumble on top of the batter in your loaf pan.
Baking
- Bake at 350°F for 55 – 60 minutes or until a wooden toothpick inserted into the center comes out with just a couple of crumbs on it. The baking time will vary depending on your oven so keep an eye on it!
- Let the bread cool in its pan for 10-15 minutes before carefully taking it out and placing it onto a cooling rack.
For the Glaze
- In a small bowl, mix together the powdered sugar, pumpkin pie spice, vanilla extract, and heavy cream.
- Drizzle this glaze on top of the bread and enjoy (best served warm)!
