Pumpkin Pie Banana Bread

This is one of my favorite things to bake when I'm looking for a comfort dessert at the end of the day or a sweet breakfast in the morning served with a cup of coffee.

Ingredients
  

For the Bread
  • 2 large ripe bananas
  • 2 large room temperature eggs
  • 1 cup pumpkin puree 245g
  • cup melted unsalted butter 74mL
  • 1 tsp vanilla extract 5mL
  • 1 tsp pumpkin pie spice extract 5mL
  • ¾ cup granulated sugar 160g
  • 1 cup all-purpose flour 136g
  • ½ cup cake flour 60g
  • tsp fine salt
  • 1 tsp baking soda 6g
  • 1 ½ tsp baking powder 7g
  • ½ tsp pumpkin pie spice 3g
For the Crumble
  • ¾ cup dark brown sugar (lightly packed) 150g
  • 2 tbsp melted unsalted butter 29mL
  • 3 tbsp all purpose flour 25g
For the Glaze
  • ½ cup powdered sugar 53g
  • ½ tsp pumpkin pie spice 3g
  • ½ tsp vanilla extract 3mL
  • 2 tbsp heavy cream 30mL

Method
 

For the Bread
  1. Preheat oven to 350°F and line a 9"x5" loaf pan with butter and parchment paper.
  2. In a medium mixing bowl, mash the ripe bananas. Add in the melted butter, room temperature eggs, pumpkin puree, vanilla extract, and the pumpkin pie spice extract. Mix until well combined.
  3. In a separate bowl, whisk together the granulated sugar, all purpose flour, cake flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined (don't over-mix!)
  5. Pour all of the batter into the loaf pan.
For the Crumble
  1. In a small bowl, mix together the brown sugar, flour, and melted butter. Sprinkle all of the crumble on top of the batter in your loaf pan.
Baking
  1. Bake at 350°F for 55 – 60 minutes or until a wooden toothpick inserted into the center comes out with just a couple of crumbs on it. The baking time will vary depending on your oven so keep an eye on it!
  2. Let the bread cool in its pan for 10-15 minutes before carefully taking it out and placing it onto a cooling rack.
For the Glaze
  1. In a small bowl, mix together the powdered sugar, pumpkin pie spice, vanilla extract, and heavy cream.
  2. Drizzle this glaze on top of the bread and enjoy (best served warm)!
