Thin & Chewy Party Cookies

Looking for a cookie recipe that you don't have to chill in the fridge before baking? These party cookies are the perfect option for when you want something super quick but you don't want to skip out on any of the flavor.

Ingredients
  

  • 1 ¼ cup cake flour 180g
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp fine salt
  • ½ cup room temperature unsalted butter 113g
  • ½ cup granulated sugar 117g
  • 2 tbsp light brown sugar (you can also use dark brown sugar) 20g
  • 1 tsp pure vanilla extract
  • 1 room temperature egg
  • 2 tbsp rainbow sprinkles
  • chopped white chocolate I used about 62g of a Lindt white chocolate bar

Method
 

  1. Preheat the oven to 350℉ and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the cake flour, baking powder, baking soda, and salt.
  3. In the bowl of your stand mixer fitted with a paddle attachment (you can also use an electric hand mixer), cream together the room temperature butter, the brown sugar, and the granulated sugar. I like to set my mixer to medium speed and let it go for 2-3 minutes for this step.
  4. Add the egg and vanilla extract to the butter/sugar mixture. Mix to combine.
  5. Add the dry ingredients to the bowl and mix until it's just combined (don't over-mix!)
  6. Roughly chop the white chocolate and add it to your cookie dough along with the rainbow sprinkles. Mix until combined.
  7. Scoop the dough into 1" – 2" balls and place them a few inches apart on your baking sheet lined with parchment paper.
  8. Bake at 350℉ for 8-10 minutes just until the edges are slightly golden.
  9. Let the cookies cool on their tray before serving. Enjoy!
